This Kai Shun knife set consists of two Kai Shun Classic knives. These knives have a 32-layered stainless steel damasque blade. Damasque steel consists of a large number of forged steel layers. This makes this steel grade very pure and hard. The VG-MAX core ensures unsurpassed cutting properties. The hardness of these knives is 61 ± 1 HRC, which exceptionally hard. This will help keeping it sharp for a long period of time. The handles are made of laminated Pakkawood and have an a-symmetrical shape. Because the set consists of a utility knife and a chef’s knife you’ve got everything you need to start your culinary journey. Next to the knives you obviously also need a cutting board, which you can order together with the knives here: set with cutting board. The handle is shaped to give a stable and solid grip.
